"We don't really have a fixed menu," our head chef told us over coffee last month. "We have a fixed philosophy, and the menu follows whatever comes off the boats." That philosophy shows up most clearly in the Private Beach Dinner experience, where the courses are decided the same morning.
It means no two beach dinners are quite the same — a good excuse, if you ask the kitchen, to book it more than once during a longer stay.
The one constant is where the produce comes from: within a short drive of the resort, almost without exception.
